Angel Hash Salad
1 24oz can pineapple, tidbits or chunks, drained. 2Tbsp cornstarch ¼ c white sugar --combine in pan with 1 c pineapple juice (add water, if necessary). Cook til thick. 2 egg yolks, beaten--add bit of hot mixture to yolks, then add egg mixture to pan and cook 3 minutes. Cool. Drain pineapple 1 c whipped cream --Add and refrigerate. ¼ lb marshmellows (15 large, cut up) Can be made day before. Can ¼ c nuts, chopped add bananas or strawberries just before serving.
Cranberry Salad
1 package cherry jello, 6 oz. Prepare jello, stir til dissolved. 1 c sugar Put sugar in cranbeerries and let 1 c cranberries, ground stand til syrup begins to form. 1 c raw apples, diced Mix in all remaining ingredients. 1 c celery, diced Refrigerate til firm. ½ c chopped nuts, if desired
Rhubarb Salad
4 c rhubarb, cut (may use frozen) --Cook over low heat til rhubarb 2 c white sugar is done, using no water. 1 3oz package red jello, dry -- Stir in dry jello and marshmellows 2 c miniature marshmellows Cool until it starts to set, stir OR in topping and refrigerate. 20 large marshmellows 2 c whipped topping Nice & thick, not too tart.
Ribbon Salad
2 small packages lemon jello (3oz) --Mix together til jello is 5 c hot water dissolved. Refrigerate til 4 c miniature marshmellows almost set. Beat with mixer. 1 package prepared Dream Whip --Add. Mix well. Let set til firm. 3 small packages red jello (3oz) --Stir till dissolved. Pour over 6 c hot water set jello. Refrigerate til firm.
Whipped Cranberry Salad
1 qt raw cranberries, ground Mix together and chill. 2 c sugar 1 small can crushed pineapple Keeps for several days. ½ lb miniature marshmellows Very good for freezing. 1 c whipped cream
