Cream Cheese Fudge

1 3oz package Cream Cheese (room temperature)      Mix together all
1 lb sifted powdered sugar (3½ c)                  but chocolate &
3 Tbsp water                                       nuts.  Blend til
1 tsp vanilla                                      smooth.  Stir in
3 sq or 3 oz unsweetened chocolate, melted         nuts & chocolate.
1 c walnuts, chopped                        Put in greased pan and
                                            chill til set.

Easy Microwave Chocolate Fudge

1 12oz package (2 c) chocolate chips     In glass bowl, combine chips
1 14 oz sweetened condensed milk         & milk.  Microwave on high
1¼ c chopped walnuts                     for 3 minutes.  Stir until
1 tsp vanilla                            smooth.  Add nuts & vanilla.

Pour into foil lined 8" x 8" pan.  Chill about 2 hours til firm.

Microwave Carmel Popcorn

1 lb brown sugar            )   In 4 qt mirowave safe dish, combine
½ c butter or margarine     )   sugar, butter, syrup, water & salt.
½ c dark corn syrup         )-- Microwave on high for 12 minutes,
1 Tbsp water                )   stirring after 5 minutes.  Add soda
1 tsp salt                  )   & pour over corn, mix together.
2 tsp soda                  )
3 qts popped corn (large blue roaster level full)
1 c skinned, roasted peanuts, optional

Spread on cookie sheet or aluminum foil and cool.  Can make into
popcorn balls.

Popcorn Balls

3 - 4 qts popped corn       Combine all but popcorn in pan and cook
1 c white sugar             to 238° on candy thermometer or until
½ c brown sugar             drops of mixture form a soft ball in
3/8 c dark syrup            cold water.  Pour over corn and mix
½ c water                   together.  Form into balls and let cool
                            on waxed paper.

Sweetened Condensed Milk

½ c very cold water      Stir together in 2 c glass measuring cup
1½ c nonfat dry milk     Heat in microwave on high til it just comes
                         to a rolling boil, stir a couple of times
                         while cooking.
3/4 c white sugar --add & stir well.  Let cool.  Keep refrigerated.

This can be used in any recipes same as any store brand.  Don't
use in recipes for lemon pie using Carnation canned sweetened milk.
