Bran Muffins

3 c white sugar ¯|
1 c shortening   |-Cream together in very large bowl.
5 tsp soda       |
1 tsp salt      _|
4 c All Bran Cereal (Kelloggs)  ¯|
2 c Nabisco 100% All Bran Cereal |-Mix & let cool.
2 c boiling water               _| Add after eggs & buttermilk.
4 eggs            ¯|--Add
1 qt buttermilk   _|
5 c flour         --Add and mix thoroughly.

Bake at 400° for 15 minutes.  Makes 100 muffins.  Keeps good in
                                                             freezer.

Overnight Buns

½ package dry yeast  ¯|
1 tsp white sugar     |--Mix yeast & sugar and sprinkle over water.
1/3 c warm water     _|  Let stand 15 minutes.
1 qt warm water            ¯|
1/3 c lard or shortening    |--Mix and beat well.
½ c white sugar             |  Then add yeast mixture and mix well.
4 c flour                  _|
1 Tbsp salt     ¯|
about 8 c flour _|---Add 2 c flour at a time, kneading flour in.

Start about 4p.m., put dough in large greased bowl and knead
every hour until you've kneaded it 5 times.  make into buns or
bread.loaves.  Cover, let stand overnight on the table and bake
in morning.  Bake at 375° about 30 minutes or until brown and
comes out of pan easily (light brown on bottom of loaf).

Raised Doughnuts

2 packages yeast dissolved in 1 c likewarm water
1 c scalded milk, cooled
2 c sugar                             Mix together like bread dough.
1½ tsp salt                           Let raise 2 times to double
2 eggs, beaten                        size.  Roll out gently to
¼ tsp nutmeg                          1/2 inch thick and cut out.
½ c soft shortening                   (Roll out on floured surface)
about 7 c flour                       Put on cookie sheet about 2"
                                      apart and let raise til double
                                      size.  Fry.
                           **If using lard to fry in, while lard is
while doughnuts are          still cold, add 1 Tbsp brown vinegar
still warm, dip in:          to every gallon of lard.  Heat grease
                             to 370° - 380°.  Using wide egg turner,
GLAZE                        slide doughnuts off cookie sheet and
3 c powdered sugar           into hot grease.  Turn doughnuts as

½ tsp salt                   color.  Fry about 1½ min per side.
½ tsp vanilla                Drain on paper towel over newspaper.

Can also coat with sugar, cinnamon & sugar, or powdered sugar.
