Cherry Coffee Cake

2 sticks margarine ) -----cream together.
1½ c white sugar   )
4 eggs
1½ tsp almond flavoring   ---Add & mix until smooth.
1½ tsp vanilla flavoring
3 c sifted flour
1½ tsp baking powder      ---Add & mix thoroughly.
3/4 tsp salt

Put in greased cookie sheet, saving back about 1 cup of batter.
Top with 1 can cherry pie filling (can use other flavors of filling),
spreading as evenly as possible.  Drop small bits of dough, using
teaspoons, all over pie filling.  Bake about 30 minutes at 325°.
When cool, drizzle with powdered sugar frosting, using almond
flavoring in frosting.  I especially good with vanilla ice cream.

Cream Puffs

½c butter or margarine
1 c water             -- Heat in pan until it boils vigorously.
1/8 tsp salt
1 c flour ------Add all at once, stirring briskly until sides of
                pan come clean.  Put in large mixing bowl.  Cool
                about 2 minutes.
Using mixer at medium speed,
beat in one at a time, thoroughly,    ------4 eggs
until mixture is stiff.

Using two spoons, shape dough (smoothing tops) on ungreased cookie
sheet, about 2 inches apart.  Bake at 450° for 15 minutes.  Reduce
heat to 350° for 20 minutes.  When cool, fill with sweetened
whipped cream, pudding, or a mixture of both.  Shells are crisper
if let to cool for several hours.

Danish Apple Pastry Bars

2½ c unsifted flour                      )-- Stir with fork until
1 tsp salt                               )   crumbly.
1 c lard or shortening (can use margarine)
2 egg yolks                   )--Add & mix together.
milk, enough to make 2/3 cups )

Divide dough in half.  Pat or roll half of dough in cookie sheet.
(can roll out and piece together in pan)

4 handful of corn flakes---crush over bottom of cookie sheet. (can
                           use a rice cereal instead).
1½ cans apple pie filling    ----------spread over dough.
         OR
8 to 10 fresh apples, sliced
1 c white sugar            ------mixed together & pour over dough.
1 tsp cinnamon

Roll out remaining half of dough & cover cookie sheet, like a pie.
(can piece together).  Brush top with milk & sprinkle 2 Tbsp sugar
or 1½ Tbsp. sugar and 1 tsp cinnamon over crust.  Bake at 350°
on middle oven shelf for40-50 minutes.  Allow to cool. then drizzle
with:  1 c powdered sugar, 1 to 3 tsp water, & ½ tsp vanilla.

Good with vanilla ice cream
