Brine for Dried Beef

20 lbs beef, slabs         Leave meat in one big chunk, divide in
1 pt salt                  3 equal parts.  Rub mixture on beef for
1 tsp salt peter           3 days, turn daily in liquid for 1 week.
¼ lb brown sugar

Freezing Sweet Corn

Cut corn off cob, raw.
4 qts corn to 1 qt water
3/4 c sugar                 --Cook for 10 minutes.  Cool and
4 tsp salt                    package for freezer.

Liver Cheese

3 lbs uncooked pork
1 lb raw liver          --Grind together.
1 small onion
2 Tbsp salt
1 Tbsp pepper
1Tbsp cloves                    --Add & mix well.  Put in jars and
3/4 c bread or cracker crumbs     cover with lids.  Boil in boiling
½ c sweet milk                    bath (canner) for 3 hours.
3 eggs, beaten

Pizza Witches

Brown 3 lbs ground beef, drain grease
1 1/3 tsp oregano
1 1/3 tsp chili powder          --Mix together and spread on bread
1 small onion, diced              or buns.  Put in 325° oven til
3 lbs grated cheese               cheese melts.

Salt Mixture for Summer Sausage

50 lbs pork and beef, ground (about equal parts)
1½ c tender quick
1½ c salt
3/4 c pepper

Whole Beef Sausage

5-6 tsp whole hog seasoning mix   --mix together.
2 lbs ground beef

Whole Hog Sausage

2 c prepared whole hog sausage seasoning (given on preceeding page)
30 lb ground pork    --mix together.
